| Rick Parsons was born and raised in
New Orleans
learning to cook at his Cajun mamas side. In high school he got his
first job as a sandwich maker at Jack's Po-Boys – the sandwich shop for
the New Orleans Saints.
Rick learned the rest from a wonderful lady named Hattie Mae. She taught him how to slow cook roast beef and make gravy and how to fry shrimp just right every time. She also taught him how to prepare New Orleans "Blue Plate Specials" like red beans & rice, jambalaya and gumbo made form scratch. RickyP worked his way through college running Jack's and learning the fine art of making a great sandwich. He later fine-tuned his Cajun & Creole dishes at Cafe Creole in Ybor City. He's finally ready to share his passion and talent with St. Petersburg and has created the next best thing to being in New Orleans – Ricky P's Po Boys! The Po Boy is a classic New Orleans sandwich that earned it's name back in the Great Depression when chefs would put leftover meats on loaves of French Bread. They would offer them to the "poor boys" who couldn't afford a plate of food. The popularity of this kind of sandwich grew within the working class New Orleanians and soon became a staple at the many family owned restaurants the city is famous for. Ricky P is excited to introduce his Louisiana cuisine right here in St. Pete. Dang That's Good! |
